"I'll get hot water instantly."

No. Hot water still has to travel from the unit to the tap, and that pipe is full of cold water. "I'll never run out of hot water."

"The temperature will be constant."

Incoming water temperature is seasonal and regional. The same house that has abundant hot water in August can find two showers a struggle in February, and nothing has failed. The unit is doing more work per gallon.
